Rahxephon was the first thing that came to mind even though it's not my favorite. If we're not talking strictly about OP and ED themes then anything by Yuki Kajiura. For actual OP and ED, I have a variety of stuff, ranging from Ranma to Samurai Champloo, from Record of Lodoss War to Tatami Galaxy.
Also somebody should fix the fact that embedded videos go over the reply box.

For old times sake it's always Kiseki no Umi from Record of Lodoss War. I will never get tired of listening to that song or singing along to it in semi mangled Japanese. Princess Nine also has a theme song I never get tired of but that's kind of nostalgic. KOTOKO and Rie Fu themes are timeless as well.
For my all time favorite though, I'm totally cheating. It's from an anime sequence in my favorite video game of all time.

Oooh!! I would almost agree with you on that choice on Spice and Wolf except I enjoyed the ending more than the opening! The song was absolutely delicious.
Eh, I never liked the ED theme as much. It was cute but I usually skipped. On the other hand, I recently used the opening theme in my Waltz class. hehe My students didn't need to know that it was from an anime (except for the one anime geek who was vaguely amused at learning how to dance to anime music)
@lbbryant i love Horo; she is amazing, she's such a trickster, and she's so befitting of the tsundere style.
@SoupyTheOctopus i love the ending as well! but their styles of music are so completely different that i can't really compare them. the opening is amazing because it's so mellow and eerie and uplifting at the same time. and the ending is amazing because it's so upbeat and you've gotta love Rocky Chack's "engrish" singing.
Oh my god yes I totally know! The ending and opening were so different from each other but they are both great in their own way! I love Horo, she's great and such a good character. Ack I have yet to finish Spice and Wolf 2, it was getting good between Horo and Lawrence. Oh the ending and opening to Spice and Wolf 2 was good too~
